Gingerbread Biscuits Recipe


Hello Lovelies,

With the festive period sadly over, and all those favourite baking goodies fading away, I thought you could use us the last of your festive spices by cooking these Gingerbread Biscuits. Using all the staple ingredients in every baker's cupboard, here is a quick and easy recipe certain to tickle your tastebuds.



You will need; 
350g plain flour
1 tsp bicarbonate of soda
2 tsp ground ginger
1 tsp ground cinnamon
125g unsalted butter
175g light soft brown sugar
1 free-range egg
4 tbsp golden syrup

Sift together the flour, bicarbonate of soda, ginger and cinnamon. Add the butter and rub together until the mix looks like breadcrumbs. Stir in the sugar.

Lightly beat the egg and golden syrup together, add to the mixture and stir until the mixture clumps together. Tip the dough out, knead briefly until smooth, wrap in clingfilm and leave to chill in the fridge for 15 minutes.

Preheat the oven to 180C/350F/Gas 4. Line two baking trays with greaseproof paper.

Roll the dough out to 0.5cm thick on a lightly floured surface. Using cutters, or freehand, cut out the shapes and place on the baking tray, leaving a gap between them. I made the mistake of the Gap not being wide enough, which results in one rather large biscuit! Don't forget to prick them.

Bake for 12-15 minutes, or until lightly golden-brown. Leave on the tray for 10 minutes and then move to a wire rack to finish cooling. When cooled decorate however you wish. Some I chose to use royal icing, some with edible glitter, and some leave plain.




Something I like to do is create little decorations from them to hang on a tree. Just pierce holes in the dough, then when cooked tie a little ribbon round so you can hook them onto a branch. Cute ey? But now that the festive period is over, you could use edible glitter, royal icing, or just leave them plain!
